Now when i had my XIM3 i had a G500

now as i have ordered a XIM Edge

do i go for the same mouse or is there better ones out there now

and what mouse mat to use

Stick with the G500 if that's what you're using and enjoying with the XIM3. Plastic works best with that sensor if you don't mind using it.
