This may be too early, but can anyone tell us how in game setting changes will be handled without a screen on the device?

It has a simple system of using the controller up update your sensitivty and button bindings. That light on the Edge is actually a full-color animated light -- it is used to give you the feedback you need when configuring it.

You can also edit via the XIM Peripheral Bridge, right?  Which is basically like how xim1&2 worked?  I somehow missed that this became available for xim3.

No, you cannot do full editing with peripheral bridge. Only the ballistics curve and sensitivity.

My big question is how are you going to display values for the mouse sensitivity? Or are you going to beep us some binary?
